Baked Salmon with Brussels sprout

Finally, it’s September! The season of Brussels sprouts, but I’ve been craving them for a few weeks now. We stumbled upon these vegetables at the local fresh market, and my eyes instantly fixated on what I’ve been longing for. I walked straight to them, and there was no doubt that tonight’s meal would revolve around Brussels sprouts. Typically, my partner, who is Belgian, enjoys them with sausages, but I wanted to go for a healthier and lighter option. I decided that baked salmon would be an ideal pairing with the Brussels sprouts. However, if you’re planning to make this dish and prefer pork chops, that’s totally fine as well!”

Tips:

  • Marinate the salmon beforehand.
  • When cooking salmon in the oven, if you take it directly from the fridge and put it in the oven, you may need to increase the cooking time from 20 minutes to 35 minutes.
  • It is recommended to let the salmon sit at room temperature before placing it in the oven.
  • Do not overcook the Brussels sprouts! They need to be cooked in the pan afterward!

  1. Preheat the Oven: Preheat your oven to 180°C.
  2. Marinate the Salmon: In a bowl, marinate the salmon fillets with a drizzle of olive oil, minced garlic, rosemary, thyme, paprika and butter . Season with salt and pepper. Let it marinate for about 10-15 minutes while you prepare the Brussels sprouts.
  3. Prepare the Brussels Sprouts: Cut the bottom and take the bad leaves. Wash it well. Pour the Brussels sprouts in a pot, boiled for 15-20 mins or until cooked (you can see is a bit darker, you can poke them with knife, if it goes through then it’s ready). Drained it.
  4. Bake: After the Brussels Sprouts are cooked. Place the aluminum foil or baking sheet (I used them both, baking sheet in the inner layer and aluminum foil), put the Salmon in an oven dish. Bake for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork. The cooking time may vary slightly depending on the thickness of your salmon fillets.
  5. Cook the Brussels Sprouts: While waiting for the Salmon to cook through. In a pan, sautéed the onion with olive oil until transparent. Add Bacon and herbs. when the bacon is cooked, toss the Brussels sprouts in then, pepper and Paprika. Mixed it well. Once the flavor combined, set aside.
  6. Serve: Remove from the oven and serve hot. You can drizzle a little extra lemon juice over the salmon before serving for a burst of freshness (I prefer to slice the lemon and place it on the plate so people can choose how much they want on their salmon).
