Today in Belgium, the weather is putting on a classic show – rain and cold. So, I figured why not rustle up something that not only keep you warm but also fills you up? I decided that we should make a soup that can also serve as a main dish. This chicken soup is quite light. The only source of oil comes from the chicken skin, so make sure to remove it if you prefer. I consider this to be a very easy dish that adults love and that provides all the necessary nutrients. It’s also an easily convincing meal for kids.
Here are some simple tips for this recipe:
- Clear the soup after the foam from the chicken comes up. This will give you a nice, clear, and clean-looking soup that’s good for both appearance and taste.
- Allow the chicken to simmer in the broth for enough time, according to your preference. Some people love to cook the chicken for a longer period (but be cautious not to overcook any of the ingredients).
- Cook the chicken until you’re satisfied with its texture before adding the root vegetables. Otherwise, we might end up with a congee-like soup, which I assume is not what you’re aiming for.
- Always add the tomatoes last and avoid cooking them for too long; 10 minutes is the maximum recommended time.
- Optional: If you can find Chinese cilantro (coriander), consider yourself lucky, as it’s hard to find here. Finely chop it and sprinkle it on top of each bowl before serving. It will create a wonderful aroma.
- P.S. If you’re a fan of turnips, go ahead and add them! They always make a nice addition!

- Prep Ingredients: Peel and chop the vegetables, mince the garlic, and set everything aside. Make sure the chicken is cut into a portion piece (depends which part you use). it is good to prepared in advance will make the process smoother.
- Start Cooking: In a large pot, put the chicken in and pour water till surpass the chicken for about 5-8 cm.
- Bring to a Boil and Skim: Bring the pot to a boil over medium-high heat. As it starts boiling, use a skimmer to remove any foam that rises to the surface.
- Seasoning: after the broth is clean and clear, pour 150 ml water, add stock cube to create a nice tasty broth. seasoning the broth with Soy sauce, pepper and minced garlic. let the broth cook with the chicken for 30 mins
- Vegetables: Add carrots and potatoes the broth. Let it cook for 10 mins.
- Vegetables (final): When the potatoes and carrot is almost done, add onion and tomatoes to finish cooking the broth.
- Serve the Soup: Place a generous portion of chicken and vegetables in each bowl. Ladle the hot soup over the chicken. pour chopped coriander on top (if you have). Eat along with rice or pour some macaroni in the soup for your kids!
