This process intensifies the rice’s natural fragrance and creates a slightly nutty, toasty aroma. When incorporated into Larbb Kai, the roasted rice adds depth to the overall flavor profile, complementing the lean chicken and herbs with its inviting scent and delightful crunch.

Instructions
- Prep Ingredients: Ensure all your ingredients are chopped and ready to go before you start cooking. Having everything prepared in advance will make the process smoother.
- Heat water: Heat water 50 ml in a pot or pan to the boiled.
- Cooked the Chicken: Add the minced chicken and cook until it’s fully cooked. Break up any large chunks of meat with a spatula as it cooks.
- Seasoning: Add the chopped Thai chili peppers, fish sauce and shallots to the pan and sauté for another minute to infuse some heat into the dish.
- Herbs and finishing touch: Remove the pot or pan from the heat and add the all the herbs; mint chopped, onion spring chopped, lime juice and roasted rice powder. Mix well to combine all the flavors.
- Your preference: Taste and adjust the seasoning if needed, adding more fish sauce, lime juice or Roasted rice according to your preference. If you like it spicier, you can sprinkle some toasted ground chili flakes or dried chili powder on top.
- To serve: Serve the Larb Kai along with lettuce, radish or cucumber. You can either spoon the mixture directly into the lettuce leaves or use the leaves as wrappers to enclose the larb.
