Well, usually some opt for pasta, others go the sandwich route or whip up instant noodles. But guess what? for Thai people, It’s none other than Pad Krapao – a zesty stir-fry that’s BFFs with rice! Easy, real meal and perfect for lunch!
Now, here’s my little spin on things – an Asian-inspired but heavy on the yum factor. Imagine hauling this sizzling sensation to your 9-to-5 – a lunch that’s snappy and satisfying, ready to jazz up your workday routine. I’m sure that the wafts of flavor in the office kitchen corridor will become a fragrant affair.
Back when I was in Thailand, this dish was my ultimate go-to – and trust me, you can’t mess with the Holy basil. It’s the culinary maestro behind that irresistible aroma and the bold taste we all crave. Pad Krapao, when translated, essentially means “stir-fried” (Pad) holy basil (Krapao). It’s a dynamic duo – no basil, no Pad Krapao magic. So, let’s stir things up, basil style!

Pad Krapao Chicken Breast (Lean version)
Description
Make sure the your chicken breast or your choice of meat is minced, the eating experience will not be the same if the meat is in pieces.

- Prep Ingredients: Ensure all your ingredients are chopped and ready to go before you start cooking. Make sure the chicken breasts is minced. Mix all the seasoning all together (Oyster sauce, soy sauce, stock powder, fish sauce and sweet black soy sauce) prepared in advance will make the process smoother.
- Heat and Sauté: Warm the cooking oil in a large pan or wok over medium-high heat. Add minced garlic and chopped Thai chilies (or your bell peppers). Sauté for about 30 seconds until fragrant (when the garlic smell good).
- Add Meat and Cook: Put in the minced chicken and break it up using a spatula. Cook until the meat is fully cooked and slightly browned.
- Sauce it Up: Pour the sauce mixture (that you have prepared) over the cooked meat.
- Flavor Blend: Stir-fry everything for an additional 1-2 minutes, letting the flavors meld.
- Add Basil: Toss in the holy basil leaves and turn off the gas continue stir- until they wilt and absorb the sauce.
- Taste and Adjust: Give it a taste and adjust the seasoning if needed.
- Serve Deliciously: Spoon the Pad Krapao over fragrant jasmine rice and consider topping it with a fried egg for extra yum.
