But fear not, if you’re hankering for the classic version, a simple swap from ham to plain chicken, beef, pork, or shrimp (I’ve a soft spot for shrimp/prawn) and from Bell pepper to carrot will do the trick.

Tips: use the leftover rice, if you don’t have the leftover, cooked it and cool it down (If Basmati, it tends to not be mushy after stir-fried).

  1. Prep Ingredients: Ensure all your ingredients are chopped, cooked, and ready to go before you start cooking. Having everything prepared in advance will make the process smoother.
    Checklist:
    –          Rice cooked (or leftover rice) seasoned (off the pan) with soy sauce, black peppers and stock powder
    –          Vegetable chopped in small cubes; Onion, Garlic and Bell pepper
  2. Heat Oil: Heat a large skillet or wok over medium-high heat. Add about 1 tablespoon of vegetable oil and butter. Swirl it around to coat the pan. Add chopped onions and garlic. Sauté until they become fragrant and slightly softened.
  3. Scramble Eggs: Push the garlic and onion to the side of the pan and pour in the beaten eggs. Allow them to sit for a moment and then gently scramble them until they’re cooked. Once cooked add Bell peppers and Ham. Stir-fry for another minute to heat through.
  4. Add Rice: Take the rice mixture and add it to the pan. Use a wooden spoon to mix the rice with the vegetables and protein, ensuring even distribution.
  5. Final Touches: Continue stir-frying for a few more minutes until the rice is heated through and well combined with the other ingredients. You can add additional soy sauce or seasonings if needed (depends on your liking).
  6. Garnish and Serve: Once the fried rice is cooked and well mixed, turn off the heat. Garnish with chopped green onions, chopped cilantro, or parsley if desired.
